Hiyashi Chuka (Cold Ramen)

A Taste of Japan:

Hiyashi Chuka is a Japanese summer dish that was first created in the 1930s. Inspired by Chinese cold noodle dishes, it was developed as a way to serve something refreshing during Japan’s hot and humid summers.

The idea quickly caught on, and by the mid-20th century, cold ramen with sauce became a seasonal staple across Japan. While the roots come from Chinese-style noodles, Hiyashi Chuka is considered a uniquely Japanese invention—an example of how Japan adapts and reimagines food to suit local tastes and seasonal needs. Today, it’s widely enjoyed as one of the country’s most iconic summer meals.

 

Ingredients:

 

  • 1 pack Sapporo Ichiban Chicken
  • 1/3 cup water
  • 3 tbsp sake
  • 3 tsp sugar
  • 3 tsp lemon juice
  • 1/2 tsp sesame oil
  • 1 tsp rice vinegar
  • ¼ Cucumber
  • ¼ Tomato
  • 2 Sliced ham
  • 1 Egg
  • 1 tbsp vegetable oil


Directions

 

 

STEP 1

In a cup, combine water, sake, sugar, lemon juice, sesame oil, rice vinegar, and the soup powder.
Mix well and chill in the refrigerator.

 

 

STEP 2

Prepare toppings: cook and julienne the egg. Julienne the cucumber and ham, and slice the tomato.

 

 

STEP 3

Boil the noodles for 3 minutes, drain, and rinse under cold water.

 

 

STEP 4

Plate the noodles, add your toppings, and pour the chilled sauce over everything. Enjoy it cold!
